Recipe request: Vegetarian Hash


I've been trying to use up some of the dry good that I have kicking around my apartment, currently that includes dry soy beans and TVP. I posted a pic of my first attempt and was sassed/asked to supply the recipe. It's nothing fancy, but it's a fairly quick and painless dinner, and is yummy with raw or steamed veggies.



Ingredients:

- 25 g dry soy beans
- 25 g dry TVP
- 60 g sweet potato
- 12 g (1 clove) raw garlic
- 1 tsp extra virgin olive oil
- 45 g bell pepper
- 25 g Enokitake mushrooms (aka golden needle mushrooms)
- 35 g bean sprouts
- 25 g grape tomatoes
- 1 tsp all spice
- 1/4 tsp turmeric
- 1 tsp cumin
- Salt & pepper to taste


Method:

- Bring two cups of water to a boil in a small pot, and add in the dry soy beans and sweet potato. Add the TVP to the water after the beans have boiled for a few minutes to hydrate it. Mix in the cumin while boiling away most of the excess water.
- In a small frying pan, warm the olive oil on low heat and toss in the garlic. Add the boiled mixture and the spices. Turn the heat to medium and add all the rest of the ingredients.  Cook until the tvp starts to brown/the excess water has cooked away (app 5 minutes, stirring off and on to prevent it from sticking to the pan).
- Option: add cheese or sriracha hot sauce.
- Dig in.
